One Pot Creamy Mushroom Pasta Recipe

This Mushroom Pasta takes less than thirty minutes to make and is serious comfort food. I mean what is better than a bowl full of cheesy, garlicky pasta topped with mushrooms that has only 300 calories and tastes super decadent.

As a kid my father used to make the most amazing mushrooms. My sister and I would fight over them. His method was simple - a cast iron pan and lots of butter. Unfortunately, I now live in a house where mushrooms are the enemy. As much as I love them, my husband despises them. And even though he doesn't mind if I cook them, I find myself not including them in many dishes since they just aren't his thing. However, when he isn't around for dinner, you better be sure I am pulling out all the mushrooms.

So when my husband had dinner plans out of the house last week, I couldn't wait to make this dreamy pasta dish. It's all cooked in one pot, which means minimal cleanup. This is very important for a night home along since it means more time for Netflix and wine.

Then there is the amazing creamy Parmesan sauce. It's almost a fake out sauce since most of the creaminess actually comes from cooking the pasta in just enough vegetable broth. This creates a thick and creamy sauce that needs just a touch of half and half to take it over the top. Then the Parmesan finishes things off.  Believe me, you will want to make this all the time.

Grab some fancy mushrooms to make it dinner party worthy, add some white beans or chickpeas for protein, top it off with some grilled chicken or shrimp, or add extra veggies. It's a versatile recipe and one I am sure you will love.

What kinds of mushrooms are best for Mushroom Pasta?

There are so many different types of mushrooms out there and it can be hard to know which to choose.  Really any type of mushrooms will work in this pasta recipe from basic white mushrooms to portobello mushrooms to harder to find "fancy" mushrooms like shitake or chantarelles. Here are some of my favorites to use and remember you can always use a combination of mushrooms.

• Portobello mushrooms: Portobello mushrooms are the largest of the white mushrooms and have a mild flavor and great meaty texture. Slice them horizontally for this pasta dish. They taste great and look beautiful.
• Cremini mushrooms: These light brown mushrooms have a mild flavor and are easy to find in most grocery stores. Their meaty texture works great with pasta and they absorb sauce well. They are also sold as baby bella mushrooms.
• Shitake mushrooms: Shitake mushrooms are mostly grown in Asian countries and have a strong earthy umami flavor. They are stronger than a typical white mushroom and add tons of delicious flavor. If you can't find shitake mushrooms, you can always sprinkle some shitake mushroom powder on top of the pasta to kick up the mushroom flavor.
• Porcini mushrooms: These mushrooms are used in Italian dishes and add a nice nutty, creamy flavor to dishes. They are delicious with pasta, which is why they work great for this recipe, but can be more expensive and harder to find. If you decide to use dried porcinis, make sure to rehydrate them first in boiling water for about 15 minutes.
• Button mushrooms (white mushrooms): These are the standard mushrooms found in most grocery stores and work great with pasta. They soak up the flavor of the sauce, have a great texture, and are a great choice.

Can I make this Mushroom Pasta without cream?

There are a few options to make this dish without cream. If dairy isn't a problem, youc an use milk, light cream cheese, light sour cream, Greek yogurt, or canned condensed milk in place of the cream. For a non-dairy option, you can use soy or almond milk. It won't turn out quite as creamy, but will still tastes delicious. You can also use canned coconut milk but it will add a touch of coconut flavor. Another non-dairy option that creates a nice thick sauce is to use half vegan cream cheese (or vegan ricotta) and half soy milk.

If you also do not eat Parmesan cheese, you can use nutritional yeast or a vegan Parmesan cheese.

Is this pasta with mushrooms healthy?

Compared to the standard creamy pasta with mushrooms served in restaurants, this dish has significantly fewer calories and fat. However, it does contain some cheese and half and half, which are not the most healthy ingredients. Some healthy highlights from this recipe include:

• Cremini mushrooms are packed with minerals, vitamins, and antioxidants. Specifically, they are a great source of B vitamins, copper, and selenium. They are also low in calories, high in fiber, and often thought of as a super food since they are very nutrient dense.
• High fiber or whole wheat pasta: By using a high fiber or whole wheat pasta, you add whole grains and fiber to your diet. It's a better for you option than standard white pasta.

How to Build Living Quarters Inside Metal Buildings

Constructing living space inside a metal building can offer many creative choices. For example, the rooms can be built in an over-size fashion to create large entertaining areas. Dimensions of most metal structures will allow for high ceilings and options for vaulting ceilings in certain spaces.

Metal buildings can provide very unique spaces for interior rooms.

Investing in remodeling a metal building can yield a return on that investment, if care is taken to design a floor plan that would appeal to many other people. Avoid creating an interior that would only a few people would find appealing.

• Catalogs of metal buildings
• City codes and restrictions
• Building permit
• Sketch pad
• Framing lumber
• Drywall
• Plumbing fixtures
• Appliances
• Electrical wiring and outlets
• Flooring
• Paint

1. Obtain books and catalogs of metal building construction. Visit local authorities to get a copy of building codes and restrictions for remodeling a metal building for living space. Ask about any restrictions, and obtain the proper kind of building permit. Make sure authorities understand the space will become living quarters and not a commercial space.

2. Plan to use insulation with a high R-value in the roof areas and exterior walls to conserve energy. Make sure reflective panels are used on the roof area, since summer heat will be easily absorbed by non-reflective metal. Frame all living areas with 2-by-4-inch lumber boards once an interior layout has been decided. Leave exposed metal rafters, strictly for an artistic effect, in certain areas of the building.

3. Add drywall throughout the building to enclose rooms. Install plumbing lines and electrical wiring before all walls are entirely sealed with drywall. Remember to add touches such as recessed lighting, a doorbell and a burglar alarm system before walls are entirely finished with drywall. Finish the drywall and paint it before installing bath and kitchen fixtures, plus kitchen appliances and cabinets.

4. Finish up all interior drywall and trim, including crown molding and baseboards. Hang closet doors and interior doors. Build exposed wooden shelving or install built-in media cabinets next. Add plastic-coated wire shelving to walk-in closets and any pantry closets.

5. Add hardwood flooring, tile over concrete and carpet in bedrooms and closets. Soften the look of concrete flooring, which a steel building will rest upon, using alternative flooring materials throughout the house. Leave some exposed concrete flooring and metal walls or framing to add high-tech visual interest. Utilize furnishings and fixtures that play up the high-tech style of a metal building.

Tip

Create a high-tech feeling by adding chrome accessories, stainless steel shelving and glass bricks. Think of ways to give the metal building a New York loft appeal. Use mirror tiles on walls, for example. Add sections of hardwood flooring planks on one or two accent walls. Use bright paint colors, such as red or bright yellow, to give hallways or bathrooms more pizazz.

Warning

Avoid building living quarters in a metal building that is not steel construction. Aluminum buildings, for example, may warp or get dents more easily. Don't invest in constructing a living space in an inferior metal building that could be damaged in a hail storm, for example.

You can then add to the light sources in the living room with individual lights on tables and around the walls in areas where people will not knock them down.

Carpeting

Consider adding carpeting to your living room to create a comfortable walking area. Carpeting lets you and your guests go barefoot if you choose. The living room almost demands this since you will want to take off your shoes and kick back on occasion. Warm plush carpets provide a good, comfortable surface for this. There are many choices when it comes to carpet size.

If your living room is very large, you can opt for wall-to-wall carpeting. On the other hand, if it's smaller, you can add just an area rug in the place where you will sit. For example, you can have a rug around the sitting and TV area where your kids will play.

The advantage of area rugs over wall to wall carpeting is, mainly, lower costs and ease of replacement. You can completely change the area rug and create a new aesthetic in a fraction of the time it would take to begin installing new wall-to-wall carpeting.

Art Ideas for Your Living Room

Many homeowners like to have some wall art in their living room. If your living room is spacious, it can accommodate a good-sized piece of art mounted alongside one wall. In some instances, you can consider multiple art pieces. Invariably, tasteful art adds to the sophistication of a living room. It adds an interesting item that sparks many conversations from impressed guests.

Selecting art is an opportunity to express your unique personality. If you are fairly conservative, you can select some classical type pieces that portray a quiet life. If you are more adventurous, you can experiment with a post-modern impressionist piece that others might consider risky. It's your space, and so feel free to decorate it to express who you are.

Because it's true. Your retirement does not have to be about scraping by and making do. This phase of your life can (and should!) be about reinventing yourself, enriching your life, enhancing your lifestyle, maybe having the adventure of your lifetime…

No matter how small your retirement nest egg.

And it's also true that you can reinvent your life at any stage. You certainly don't have to wait for "retirement age" to "retire" overseas.

I know these things to be fact because I speak every day with people just like you who have already done it…

Maybe you've been thinking about it for a long time.

Thinking, thinking, thinking… but not acting!

Somewhere out there the perfect retirement haven awaits you… is calling to you.

So what are you waiting for? What in the world is holding you back?

Don't answer. In fact, I think I know the answer…

With so many options and opportunities on the table, I understand how you might be confused… intimidated… almost paralyzed with uncertainty and doubt.

"How," you must ask yourself, "am I ever going to find the place that's right for me?"…

"And, once I do, how in the world am I going to figure out how to make the big leap to launching a new life in an entirely new land?"…

I'm going to be honest with you here. If you try to figure out all the logistics involved with reinventing your life overseas on your own, it could take you a long time. Months… years…

It could take you more than a decade. I know people who have been considering and researching the idea of living or retiring overseas for 10 years or longer…

What am I saying? It took me more than 10 years to get started!

I knew that I wanted to experience life overseas from a very young age. I traveled and I spent time in many beautiful, interesting, tempting places… but, for years, I rationalized reasons why the time wasn't right for making a permanent move… and I returned "back home" to the East Coast.

Finally, after more than 12 years of researching and writing about living overseas, circumstances conspired to get me off my keister. Finally, I launched my own new life overseas.

This is Lief and me back in 1998 when we were
thinking about our first move overseas…

Finally, I had the motivation and the impetus. Still, though, I didn't have any help.

My husband Lief Simon and I were the blind leading the blind, feeling our way through every step we made. We didn't know what we didn't know… which was probably a good thing. Had we realized how naïve and clueless we were, we likely would have stayed put!

Did we ever imagine way back then that, 20 years later, we'd have traveled from Waterford, Ireland, to Paris, France, and then on to Panama City, Panama, where we'd be living and running a business?

No way. We had no idea when we took that first step down our own adventures-overseas path where it would lead.

And I can't tell you now where it is headed from here. But I can say with confidence that the future wanderings, wherever they lead us, will be more efficiently handled than the previous ones!

Each new adventure abroad brings new challenges… and therefore new lessons.

Lief and I are learning still, but, I have to say that, more than 20 years and four cross-continental moves later, we've got a pretty good idea how to do this.

Along the way, from Baltimore to Waterford… from Waterford to Paris… from Paris to Panama… and back to Paris… Lief and I have dealt with…

• Miscommunications, misinterpretations, misunderstandings, and other language missteps (even in Ireland, where the language is "English")…
• Tax advisors and tax returns, filing in the States as non-resident Americans and abroad where we've had income to report…
• Real estate agents and property developers in undeveloped, unregulated markets…
• Choosing education systems and schools for our kids…
• Setting up shop—and hiring staff—in a series of foreign countries…
• Setting up house—renovating, furnishing, decorating—again, in a series of countries…
• Navigating local real estate markets where no one's ever heard of a multiple listing—figuring how to rent, how to own, where and when to buy, what to pay…
• Bank accounts, Internet packages, health insurance, dentist visits, buying cars, selling cars, moving pets, getting driver's licenses, wiring money, paying credit card bills, managing investment accounts, arranging piano tutors and after-school activities for our kids… in English, French, and Spanish…

Now—after all these years of feeling our way through new places, new people, new systems, and new cultures—we have broken all our accumulated wisdom earned through the school of global hard knocks down into a step-by-step program you could use to follow in our footsteps.

You see, there's a science to succeeding at this whole retire overseas game… and an art.

As with anything, you need a plan… a system that's not going to take you 10+ (!) years to figure out.

That's the idea behind my new "52 Days To Your New Life Overseas" program.

This is my way of sharing my family's collected knowledge (and that of our most trusted friends and contacts around the world) with you, one easy step at a time, one day at a time, over 52 days.
